Chef Joe Eidem, CEC, HGT, AAC

Arrowhead Regional Medical Center’s Executive Chef is responsible for maintaining the quality and safety of the patient dining experience as well as making sure our guests eat healthier and better food options in the café. On a daily basis, the Chef manages the production and scheduling with the help of his supervisors, and budgets how much food to buy and oversees changes on the menus. ARMC serves more than 1,800 guests each day at the Arrowhead Café and at least 400 patients. Since our census changes daily we still have to produce enough food to feed every bed in the hospital which could be 456 patients a day. Maintaining quality, food safety, and creativity is a 24-hour job for a Chef at a large hospital like ARMC.

Chef Joe Eidem has been actively involved with the American Culinary Federation for more than 35 years. Chef Joe is a Certified Executive Chef, Fellow in the American Academy of Chefs and in the Royal Order of the Golden Toque. Chef Eidem is one of 60 American Chefs who are distinguished Fellows in the World Master Chef Society of Europe. During his career, Chef Joe has owned an Italian restaurant and has hosted a local television cooking show and has appeared on the Food Network.

Most recently, he served as the Foodservice Director at a large Medical Center in Reno, Nevada, Renown Regional Medical Center. While there, he implemented the Destination 10 process and received hospital-wide recognition for creating a department that embraced changes to quality and customer service.

Chef Joe has received much recognition and many awards in his career as a chef. In 2006, he was named “Most Professional Chef in America” by the American Culinary Federation. Chef Joe has also received the Antonin Crème Medal; two Presidents’s Medallions, the AAC Regional Chairs Award and was the ACF Western Regional Chef of the Year. Chef Joe is also has authored two books.

Wherever Chef Joe works he is always held in the highest regard because no one loves food service more than Chef Joe. His enthusiasm is contagious!
